Homemade Muesli Recipe

Ingredients

  • 4 cups rolled oats (whole, chunky, wholemeal)
  • 1 cup threaded or desiccated coconut
  • 1 cup of seeds (pumpkin, sunflower, linseed, chia)
  • 1 cup of nuts (cashew, walnut, almond, macadamia, brazil nuts)
  • ½ cup dried fruit, chopped finely (apricot, sultana, apple, pear, air-dried raspberries chopped dates, figs or prunes)
  • ½ cup almond or olive oil
  • 2 tbsp. pure maple syrup

Instructions

  1. Preheat oven to 170ºC
  2. Mix dry ingredients, except the dried fruit, together
  3. Heat the oil and maple syrup together until hot. Pour into the dry ingredients and mix well
  4. Tip into a large baking dish or roasting pan and toast for approximately ½ hour, stirring occasionally, until golden brown
  5. Cool the muesli before adding the dried fruit. Store in an airtight container
