Homemade Muesli Recipe
Ingredients
- 4 cups rolled oats (whole, chunky, wholemeal)
- 1 cup threaded or desiccated coconut
- 1 cup of seeds (pumpkin, sunflower, linseed, chia)
- 1 cup of nuts (cashew, walnut, almond, macadamia, brazil nuts)
- ½ cup dried fruit, chopped finely (apricot, sultana, apple, pear, air-dried raspberries chopped dates, figs or prunes)
- ½ cup almond or olive oil
- 2 tbsp. pure maple syrup
Instructions
- Preheat oven to 170ºC
- Mix dry ingredients, except the dried fruit, together
- Heat the oil and maple syrup together until hot. Pour into the dry ingredients and mix well
- Tip into a large baking dish or roasting pan and toast for approximately ½ hour, stirring occasionally, until golden brown
- Cool the muesli before adding the dried fruit. Store in an airtight container
